Professional sharpening requires sharpening stones of different grits. Using water stones makes the sharpening angles meet at one and the same point, which makes edges very even and sharp.
Norton Waterstone water stones are professional tools that come in a plastic storage case with instructions for use. The intended use determines the grit of the stone.
Grit 1000 grinds the edge to an even, smooth angle. It is the most common grit for sharpening new knives and removing grinding marks left at the factory.
