Professional sharpening requires whetstones of different grits. Water stones make the sharpening angles meet at one and the same point, which leaves the edges very even and sharp.
Norton Waterstone water stones are tools for professional use and come in a plastic storage case with instructions for use. The intended use determines the grit of the stone.
Grit 1000 is well suited to grinding new, unused knives. Grit 4000 is intended for producing very fine edges, which can be polished with grit 8000 (sold separately).
